Ingredients
- 1 cup raw couscous
- 1 cup water
- 3 beefsteak tomatoes (or cherry tomatoes)
- 10 Taggiasca olives
- 4 pork sausages
- 1/2 Tropea red onion
- 3 oz oz tuna in oil
- to taste canned sweet corn, drained
- 1.8 oz oz cooked, boiled chickpeas
- 4 tablespoons extra virgin olive oil
- salt

Steps
Making the recipe for Couscous with Tomatoes, Tuna, Chickpeas, and Corn is very simple. First, prepare the couscous according to the instructions on the package.
Bring a cup of salted water to a boil. Remove from heat and add 1 tablespoon of extra virgin olive oil and a cup of couscous grains. Stir immediately and cover with a lid: let it rest off the heat for 5 minutes.
After 5 minutes, fluff the couscous grains with a fork and set aside.
Meanwhile, place the sausages on a plate and microwave on high for about 90-120 seconds until well cooked. Adjust by eye. Then, cut them into pieces.
Then, wash the tomatoes, dry them with a clean cloth (or paper towel) and cut them, first into slices and then into cubes.
Slice the onion into rings, drain the tuna and add them, together with the chickpeas and corn, to the bowl with the other ingredients: season with extra virgin olive oil, salt to taste, and a pinch of chili powder. Mix and let it rest in the fridge for at least one hour.
