Ingredients

  • 1 cup raw couscous
  • 1 cup water
  • 3 beefsteak tomatoes (or cherry tomatoes)
  • 10 Taggiasca olives
  • 4 pork sausages
  • 1/2 Tropea red onion
  • 3 oz oz tuna in oil
  • to taste canned sweet corn, drained
  • 1.8 oz oz cooked, boiled chickpeas
  • 4 tablespoons extra virgin olive oil
  • salt

Steps

Making the recipe for Couscous with Tomatoes, Tuna, Chickpeas, and Corn is very simple. First, prepare the couscous according to the instructions on the package.

  • Bring a cup of salted water to a boil. Remove from heat and add 1 tablespoon of extra virgin olive oil and a cup of couscous grains. Stir immediately and cover with a lid: let it rest off the heat for 5 minutes.

  • After 5 minutes, fluff the couscous grains with a fork and set aside.

  • Meanwhile, place the sausages on a plate and microwave on high for about 90-120 seconds until well cooked. Adjust by eye. Then, cut them into pieces.

  • Then, wash the tomatoes, dry them with a clean cloth (or paper towel) and cut them, first into slices and then into cubes.

  • In a container, pour the cooked couscous and add the chopped tomatoes (with their juice), the olives, and the sausages, cut

  • Slice the onion into rings, drain the tuna and add them, together with the chickpeas and corn, to the bowl with the other ingredients: season with extra virgin olive oil, salt to taste, and a pinch of chili powder. Mix and let it rest in the fridge for at least one hour.
