Ingredients

  • 11.3 oz pasta (I used kamut penne)
  • 4 tablespoons extra virgin olive oil
  • 1/2 onion (chopped)
  • 8.8 oz sausage (I used Bra sausage)
  • 1/4 cup white wine
  • 3.5 oz cherry tomatoes
  • 2 tablespoons tomato paste
  • parsley
  • to taste salt
  • 5.3 oz cream cheese (I used Philadelphia)
  • to taste grated Parmesan cheese

Steps

  • First, put a pot with plenty of water on the stove and bring it to a boil. When the water boils, add the pasta (I used kamut penne) and cook it for at least 10 minutes (according to the instructions on the box).

  • Meanwhile, in a sufficiently large frying pan, heat 4 tablespoons of extra virgin olive oil and the onion finely chopped with a manual chopper (practical and fast) and let it golden.

  • Remove the skin from the sausage and crumble it, crushing it with a fork, and let it sauté with the soffritto for a few minutes. When it is well browned, add the white wine and let it evaporate, then add the cherry tomatoes cut in half, the tomato paste, and let it cook, then add the chopped parsley.

  • Towards the end of the pasta cooking, add the Philadelphia (or other spreadable cheese like stracchino or ricotta), a ladle of pasta cooking water and mix well.

  • Drain the pasta with a skimmer and pour it directly into the pan with the sauce. Add plenty of grated Parmesan and stir well. If you see that the sauce dries up too much, add a bit of pasta cooking water and let it blend.
