Ingredients
- 14 oz rabbit (cutlets)
- 1 package cooking cream
- as needed flour
- 1/4 cup dry white wine
- 1 onion (or shallot)
- 5 tbsps extra virgin olive oil
- as needed salt
- as needed white pepper
- as needed thyme (chopped)

Preparation
First, pour 5 tablespoons of extra virgin olive oil into a pan and add the onion finely sliced, lightly wilt on low heat. Add the rabbit loin cutlets and turn them occasionally.
Add 1/4 cup of white wine and let it evaporate. Dust with a bit of flour to thicken, and cook for a few minutes. Season with salt and a pinch of pepper.
When almost cooked, add the cooking cream and mix until you get a homogeneous cream.
Add a little thyme and remove from the pan, plate the cutlets accompanied by the creamy sauce and serve hot.
