HOW TO MAKE FLATBREAD WITH PROSCIUTTO, STRACCHINO, AND ARUGULA
First, prepare the flatbreads with my recipe or your favorite recipe, or take the pre-made ones out of the package. Heat a large pan (about 11 inches in diameter), lightly oiled, and warm it slightly on both sides (about 1 minute per side).
Place the flatbread on a plate and using scissors, make a small cut to the center. Spread the stracchino on half of the flatbread and place the prosciutto and arugula on the other half.
Fold the flatbread starting from the side with the prosciutto, overlapping it onto the side with the arugula; then, flip the obtained quarter onto the side with the stracchino and finally fold again over the last quarter (from the picture below, it becomes clearer). Take the obtained flatbread and warm it again in the hot pan (or griddle) and serve.
