Fried Artichokes

  • 2 artichokes
  • 1/2 lemon
  • 2 eggs
  • flour
  • 3 tablespoons Parmigiano Reggiano DOP
  • parsley
  • salt
  • pepper

To make the Fried Artichokes recipe, you need:

Steps

  • First, clean the artichokes. Remove the stems of the artichokes flush, then remove the outer leaves, which are harder. Trim the remaining leaves, remove the inner choke with the tip of a knife, and cut them into thin slices (about 0.2 – 0.3 inches thick).

  • Once cleaned, cut them, and immerse them in fresh water with the lemon to prevent them from darkening: don’t overdo it with the lemon, or they will become too acidic.

  • In the meantime, prepare the coating: in one dish, place the flour, in another the eggs beaten with salt, and in yet another the breadcrumbs with chopped parsley and grated parmigiano cheese.

  • Drain the artichokes, pat them well with paper towels so that they are nice and dry, and flour them on one side and then the other: shake them to remove excess flour.

  • Dip them in the beaten egg and then in the breadcrumbs: once breaded, they are ready to be fried.

  • Place a pan on the stove with plenty of extra virgin olive oil and heat it. Once the oil is hot, fry the artichokes on both sides.

You can store Fried Artichokes for up to 1 day, although I recommend consuming them immediately to maintain their crispness.

How to store freshly purchased artichokes

Like all fresh products, artichokes should be consumed as soon as possible. However, if you can’t prepare them right away, it’s better to store them in the refrigerator (or in a cool place) with the stems immersed in a container full of water. If the stems have already been cut, you can wrap them in moistened kitchen paper and store them in the refrigerator.
