Grilled fennel, perfect as an appetizer but also as a light side dish. Easy to prepare, they are really tasty.
The preparation is really simple: I cut the fennel into very thin slices, grilled them and then seasoned them with extra virgin olive oil, garlic, parsley, and sun-dried tomatoes. If you prefer, you can also add some chili pepper for a spicier flavor, or simply replace the parsley with oregano, mint, or thyme. As you like.
Once seasoned, let them rest for about an hour: the result will be even better, although they are good eaten immediately. Try them, I’m sure they will win you over.

To make the Grilled Fennel recipe, you need:
- 1 Slicer
- 1 Grill Pan
- 1 Tongs
Steps
First, clean the fennel. Remove the green part, the fronds (set them aside), and part of the base, not too much, practically at the edge, so the leaves stay together.
Then, starting from the base, cut them into slices about 1/8 – 3/16 inch thick with a mandoline (or a slicer), place them on a plate and let them dry in the air for about half an hour.
Once ready, place them on kitchen paper and heat the grill pan (or grill). Once hot, lightly oil the plate and with a kitchen brush also the fennel and put them to grill for a few minutes on both sides.
Using tongs, place them on a plate and then directly on the serving dish. Make a first layer, season with a drizzle of extra virgin olive oil, sun-dried tomatoes in oil, the chopped fronds, very fine pieces of garlic (to taste), and a handful of parsley (or oregano) and continue this way until all the fennel is used.
