Grilled zucchini, tasty and delightful, are perfect as an appetizer, but also as a side dish or to offer at a buffet. The recipe is very easy and also quick. I dressed them with extra virgin olive oil, garlic, and oregano, but if you want, you can add some chili pepper for a spicier taste, or simply substitute the oregano with parsley, mint, or thyme.

Once dressed, let them rest for about an hour: the result will be even better, although they are good eaten immediately. Try them, I’m sure they will win you over.

  • 3 zucchini
  • extra virgin olive oil
  • 1 clove garlic
  • dried oregano (or parsley)
  • leaves mint (optional)

Steps

  • First, wash the zucchini and trim them; then, using a mandoline (or a slicer), slice them lengthwise to a thickness of about 1/8 inch, then place one layer in a colander and sprinkle with fine salt, then cover with another layer and salt, and so on. Place a plate on top and set a pot full of water on it as a weight: this will help to remove most of the water.

  • Once ready, place them on kitchen paper and heat the grill pan (or the grill). Once hot, lightly oil the plate and use a kitchen brush on the zucchini and place them to grill for a few minutes on both sides.

  • Using tongs, place them on a plate and then directly on the serving dish. Make a first layer, season with a drizzle of extra virgin olive oil, very fine pieces of garlic (to taste), and a sprinkle of oregano (or parsley), and continue this way until you have used all the zucchini.
