Lentil Salad with Cherry Tomatoes

Tasty and light, this Lentil Salad with Cherry Tomatoes is perfect as a side dish or as a main course to customize as you like, for a casual dinner with friends or family.

Quick to prepare, it practically takes just 5 minutes to make: just get some lentils, I used canned ones (I always have a stock in the pantry), cherry tomatoes, a spring onion, Feta cubes and it’s done.

If you prefer, you can use dried lentils: remember to soak them the night before. If they are split lentils, it is not necessary: read the indications on the package. It will take a little longer, but the result does not change.

Colorful and tasty, it’s perfect to take to the office or the beach and enjoy cold.

Ingredients

  • 1 can lentils (drained)
  • 8 cherry tomatoes
  • 1 spring onion
  • 10 Taggiasca olives
  • to taste feta (cubed – as desired)
  • extra virgin olive oil
  • salt

Steps

Making the Lentil Salad with Cherry Tomatoes is very simple.

  • First, remove the preserving water from the lentils, put them in a colander and rinse them under running water, let them rest just enough time to dry (or gently pat them with kitchen paper).

  • Once dry, place them in the bowl you will use to serve your salad.

  • Wash the cherry tomatoes, pat them with a clean dishcloth and cut them in half and then into wedges, then add them to the lentils along with the Taggiasca olives.

  • Clean the spring onion, remove the root and if present all the soil, cut the green part (but do not throw it away, you can use it to make vegetable broth) and finally, slice the remaining part (the white part, to be exact) into rings.

  • Finally, cut the feta into cubes and add it to the other ingredients, then season with extra virgin olive oil, salt, and fresh basil.
