Anchovies or Sardines?
They are actually the same fish. The difference lies in the processing and preservation methods. They are called sardines if the fish are filleted and preserved in oil or marinated, whereas they are referred to as anchovies if they are preserved in salt, whole.
In fish markets, however, smaller, younger fish are often called sardines, while larger, more mature ones are referred to as anchovies.
Organoleptic Value
Anchovies are semi-fatty fish, quite digestible, with about 90 kcal/100 g. They are rich in omega-3 fatty acids, beneficial for the cardiovascular system, high biological value proteins, essential amino acids, vitamins A and B, minerals (iron, calcium, potassium, and phosphorus).
Watch Out for …
The lesser-known ‘alaccia’ is often confused with anchovies but is actually a much less valuable fish, with a stronger and sometimes unpleasant taste. It can be recognized by its larger size and brownish color.
