Here are some tips for making a perfect pie:
– First of all, to roll out the shortcrust pastry well or to make the strips to place on top, it is important that the dough is very cold, otherwise it will be very difficult to shape. This is why chilling in the fridge is essential.
– Also, to roll it out well, the work surface must always be floured, this way you won’t risk making a mess. Another good method is to roll it out between two sheets of parchment paper.
– Normally, the recommended thickness is 1/5 inch for the base and 1/8 inch for the decorations.
– If it happens that the part to place on top of the pie (the carved design) is larger than necessary (it tends to increase in size during baking), don’t worry and don’t get discouraged. As soon as it is out of the oven, when it is still warm, you can gently trim with a cutter to reduce the diameter of the lid or the internal design by a few millimeters.
