Ingredients
- 10.5 oz pasta (I use short mafalde)
- 3 tbsp extra virgin olive oil
- 1/2 onion
- 5.3 oz cherry tomatoes (red and yellow)
- 4.2 oz pesto
- 1 pack canned tuna in oil (240g)
- salt
Tools
To make the Mafalde with Tuna, Cherry Tomatoes, and Pesto recipe you will need:
- 1 Pan
- 1 Chopper
Steps
HOW TO MAKE MAFALDE WITH TUNA, CHERRY TOMATOES, AND PESTO
First, put a pot with plenty of water on the stove and bring it to a boil. When the water boils, add the mafalde (or the short pasta shape you prefer) and cook them for at least 10 minutes (according to the directions on the box).
While the pasta is cooking, prepare the sauce.
Meanwhile, heat 3 tablespoons of extra virgin olive oil in a fairly large non-stick pan, add the onion finely chopped with a manual chopper (practical and very fast), and let it turn golden. Then, add the tuna and let it absorb the flavors.
In the meantime, wash the cherry tomatoes and cut them in half (or into wedges) and then add them to the pan with the tuna, then lower the heat, season with salt, and cook for about 7-8 minutes, covered, then add the pesto and, continuing to stir, let it absorb the flavors for a couple of minutes.
Once the pasta is cooked, drain it al dente and pour it into the pan with the sauce (if necessary, add a little cooking water), stir and sauté for a few minutes to well blend everything together. Finally, the Mafalde with Tuna, Cherry Tomatoes, and Pesto are ready. Enjoy your meal!
Until next recipe.
Storage
You can store the Mafalde with Tuna, Cherry Tomatoes, and Pesto for up to 2 days in the refrigerator, sealed in an airtight container.
Variations
In this recipe, I used canned tuna in oil after draining it, but you can also opt for natural or fresh tuna.
If you don’t have cherry tomatoes, replace them with tomato sauce, and you’ll still get a super first course.
