Meatless stuffed artichokes, prepared with eggs and grated cheese, just like my mom always makes. A fully vegetarian version for a rich and tasty main course, celebrating the artichoke as the main star.
The preparation is really simple. First, I clean the artichokes by removing the tough leaves and the internal choke, then I soak them in water and lemon. Meanwhile, I prepare the stuffing by mixing bread crumbs, grated cheese, garlic, parsley, eggs, and finely chopped artichoke stems. I spread the artichoke leaves well, stuff them with the mixture, and stand them up in a pot. Finally, I add a drizzle of oil, a bit of water at the bottom, and cook on low heat with the lid until they are tender. Easy, right?
Excellent boiled, fried, or sautéed, and surprising if enjoyed raw, the artichoke is a versatile ingredient for first courses and side dishes. It shines best, however, when served stuffed: a preparation that enhances its elegant and enveloping form, just like in my recipe.

- 4 artichokes
- 2 eggs
- 1 oz Grana Padano DOP (grated – if you prefer a stronger taste, you can replace it with pecorino)
- 1 bunch parsley
- 2 cloves garlic (1 for stuffing and 1 for cooking)

- to taste breadcrumbs (even 3 tablespoons, but add one at a time)
- to taste pepper
- 3 tablespoons olive oil
- 2 cups water

Preparation of Meatless Stuffed Artichokes
Ingredients for 4 people
To make the Meatless Stuffed Artichokes, start by cleaning the artichokes.
Trim the stems of the artichokes.
Then, remove the outer leaves, which are tougher.
Trim the remaining leaves, trim the stalks, and remove the internal choke using the tip of a knife.
To prevent them from darkening, soak the cleaned artichokes in water and lemon, without overdoing it with lemon as it can make them too sour.
Place in a bowl the eggs, grated cheese, chopped parsley, and garlic, a pinch of salt, and pepper.
Mix well.
Add the breadcrumbs, enough to have a homogeneous mixture.
Take the artichokes and let them drain upside down on a kitchen towel.
Once dry, spread open the artichoke cups with your fingers and fill them with the mixture.
Place in a casserole 3 tablespoons of extra virgin olive oil and 1 garlic clove. Slightly brown the garlic.
Then, add the artichokes turned upside down and let them brown.
At this point, lay them on one side, add 2 cups of water, a bit of salt, and let them cook for about 1 hour, covered.
Check the cooking from time to time with a fork.

Tips and Suggestions
– Do not discard the stems: clean the outer part of the stems, cut them into small cubes, and sauté them with garlic. Then add them directly into the stuffing mixture to give it more flavor.
– Always use water and lemon during cleaning to prevent them from darkening, but add a bit of lemon zest to the stuffing to cleanse the palate.
– If you buy artichokes and don’t cook them right away, treat them like flowers. Cut a bit of the stem and place them in a vase with fresh water in the fridge; they will remain crisp much longer.
