- 6 eggs
- 5 tablespoons grated Parmesan cheese
- to taste salt
- to taste parsley (chopped)
- to taste olive oil (for frying)
- to taste cheese (stracchino or other spreadable cheese)
- to taste cherry mozzarella balls
- to taste cherry tomatoes

Steps
First, beat 3 eggs in a bowl, add half of the grated Parmesan cheese, a handful of chopped parsley, salt, and pepper.
Place the pan on the stove with the oil. Add the egg, cheese, and parsley mixture and cook for a few minutes on both sides. Repeat with the remaining ingredients: in total, I made 2 omelettes.
Place the omelettes on a plate, use a scalloped biscuit cutter to cut circles, and place them on a serving dish. Spread the soft cheese (I used stracchino) on an omelette circle, cover with another omelette, then place a cherry mozzarella ball (well-dried) on top and finish with half a cherry tomato. Skewer with a bamboo toothpick and serve.
