Orecchiette with Bacon, Green Beans, and Cherry Tomatoes, a tasty first course, easy and quick, ideal for making even those who don’t love vegetables eat them. It’s a simple and very flavorful recipe, which you can make in less than half an hour.

I had a handful of green beans from the garden and since they weren’t enough to make a salad, I thought it would be good to combine them with cherry tomatoes for a truly delicious first course. I also added two tablespoons of sauce that I already had ready to the seasoning, but you can skip it or add tomato puree instead; if so, let it cook a few more minutes.

As for the type of pasta, it’s up to you. I chose orecchiette, but any type of pasta, gnocchi, or tagliatelle can work. It depends on your taste or what you have in the pantry.

Ingredients

  • 11 oz pasta (orecchiette, sedanini, penne, mezze penne, casarecce … whichever you prefer)
  • 1/2 onion (chopped)
  • 5 oz green beans
  • 3 tbsp extra virgin olive oil
  • 5 slices rolled bacon (or 2.8 oz of diced bacon)
  • handfuls cooked ham (diced – a handful)
  • 15 cherry tomatoes
  • 2 tbsp tomato sauce
  • pecorino (grated)

Steps

HOW TO PREPARE ORECCHIETTE WITH BACON, GREEN BEANS, AND CHERRY TOMATOES

  • First, trim and wash the green beans, then cook them in boiling water for at least 10 minutes or until they are tender. Set aside.

  • Meanwhile, put a pot of abundant water on the stove and bring to a boil. When the water boils, add the pasta (I used orecchiette) and cook it for at least 10 minutes (according to the instructions on the box).

  • While the pasta is cooking, prepare the sauce.

  • Heat 3 tablespoons of extra virgin olive oil in a large nonstick pan, add the onion finely chopped with a manual chopper (practical and very fast), and let it become golden. Then, add the bacon sliced and a handful of diced cooked ham.

  • Then, wash the cherry tomatoes, cut them into wedges, and add them to the pan with the sauce, pour 1 ladle of cooking water, lightly salt, and cover with a lid: let cook for about 10 minutes. When there are about 3 minutes left at the end of cooking, also add the green beans cut into pieces.

  • Once the pasta is cooked, drain it al dente and add it to the pan with the sauce (if needed, add a little cooking water), mix and let it sauté for a few minutes to combine everything well. Finally, the Orecchiette with Bacon, Green Beans, and Cherry Tomatoes are ready. Enjoy your meal!
