HOW TO MAKE THE OVEN-BAKED PUMPKIN GRATIN RECIPE
First, cut the pumpkin into slices about 1/4 – 3/8 inch thick; remove the seeds and inner fibers, and with a sharp knife, remove the skin.
Cover a baking tray with parchment paper and place the pumpkin slices slightly overlapping each other; drizzle with a bit of extra virgin olive oil, add the rosemary and salt. Cover the tray with aluminum foil and bake in a preheated oven at 365°F for about 30 – 35 minutes: the pumpkin should be cooked. Check doneness before removing from the oven.
Once cooked, remove the tray from the oven, discard the aluminum foil and cover with grated parmesan, breadcrumbs, and fontina (or chosen cheese) sliced thinly. Finally, add a drizzle of EVO oil and bake again in “grill” mode for about 4 – 5 minutes, or until the cheese has melted.
