I also added cherry tomatoes to give a touch of color to the dish and the taste doesn’t clash at all, but if you prefer or don’t have cherry tomatoes, you can opt for a white version.
The pasta with bacon, cherry tomatoes, and scamorza recipe I propose is made with mezzi rigatoni, but you can replace it with any type of pasta you prefer, although I recommend using short ribbed pasta (so it absorbs the sauce better) like penne, farfalle, fusilli.

Ingredients for Pasta with Bacon, Cherry Tomatoes, and Scamorza
- 11 oz short pasta (mezzi rigatoni)
- 3 tbsps extra virgin olive oil
- 5.3 oz smoked bacon (or sweet)
- 7 cherry tomatoes (as desired)
- 3.5 oz scamorza (sweet)
- to taste parsley
- 2 tbsps grated Parmesan cheese

Steps
First, put a pot with plenty of water on the heat and bring it to a boil. When the water boils, add the pasta (I used mezzi rigatoni) and cook it for at least 11 minutes (depending on the instructions on the box).
Meanwhile, in a large enough pan heat 3 tablespoons of extra virgin olive oil and the bacon cut into cubes and brown it. Then, add the cherry tomatoes, cover with a lid, and cook for about 5 – 6 minutes over low heat, until the tomatoes are well wilted, crushing them from time to time with a wooden spoon.
Meanwhile, grate the scamorza with a large-hole grater and set aside.
Once the pasta is cooked, drain it al dente and pour it directly into the pan with the sauce, add the scamorza, mix and let it blend for a few minutes: season with chopped parsley, sprinkle with grated Parmesan and serve.

You can store the Pasta with Bacon and Cherry Tomatoes in the refrigerator for 1 – 2 days, in an airtight container.
Tips and Variations
– Pasta: Any short pasta shape will be perfect. If you want a healthier version, use whole wheat pasta or kamut pasta.
– Bacon: I used smoked bacon. If you don’t like it, you can substitute it with sweet bacon or diced cooked ham.
– Scamorza: To add more flavor to your dish, you can use smoked scamorza or another more aged cheese with a stronger flavor. Or, conversely, a more “neutral” cheese like mozzarella, which will enhance the flavor of the bacon even more.
– If you like, you can add a pinch of chili pepper to the pan along with the bacon.
Did you know that …
This way the pasta doesn’t stick. If you want the pasta not to stick and be cooked to perfection, don’t pour it all at once into the boiling water, but a little at a time, so that the water continues to boil and the cooking is uniform. However, remember to stir regularly throughout the duration.
