Pasta with Cherry Tomatoes, Tuna, and Olives, a tasty and easy main course, perfect for a quick family lunch or as a dinner saver.

Preparing this pasta is really simple. First, I started cooking the sauce with tomato puree, cherry tomatoes, chili pepper, anchovies, and olives. While the sauce was cooking, I boiled the pasta according to the indicated cooking times. A moment before the cooking time was over, I added the tuna to the sauce and finished it, making sure everything is flavorful. It’s so good that you won’t even leave a forkful behind.

Ingredients

  • 320 g pasta (short – orecchiette, mezzi rigatoni, penne, casarecce …)
  • 3 tablespoons extra virgin olive oil
  • 1 clove garlic
  • 1 onion (small)
  • 3 anchovies in oil
  • to taste green olives
  • to taste black olives
  • 5 capers
  • 10 cherry tomatoes
  • 200 g tomato puree
  • 160 g tuna in oil
  • to taste salt
  • to taste chili pepper

To make the Pasta with Cherry Tomatoes, Tuna, and Olives recipe, you will need:

  • 1 Frying Pan
  • 1 Pot
  • 1 Chopper
  • 1 Slotted Spoon

Steps

  • First, in a large frying pan, heat 3 tablespoons of extra virgin olive oil, add the finely chopped onion using a manual chopper (practical and fast) and let it turn golden for a few minutes along with a whole garlic clove, then add the anchovies (crush them with a wooden spoon to melt them) and capers and sauté lightly for about 2-3 minutes.

  • Then, add the tomato puree, the cherry tomatoes cut into wedges, the chili pepper and the olives, season with salt, cover with a lid and let it cook for about 10-15 minutes: you should obtain a thick, not too liquid sauce.

  • Meanwhile, bring a pot of abundant water to a boil. When the water boils, add the pasta (I used whole wheat orecchiette) and cook it for at least 11 minutes (depending on the package instructions); drain it al dente.

  • Meanwhile, as the pasta cooks, a few minutes before draining it, add the tuna to the sauce (first drain it from the preservation oil) and mix well. If necessary, add a ladle of pasta cooking water.

  • Drain the pasta with a slotted spoon directly into the frying pan, mix well and let it blend over the heat for a few minutes, ensuring everything is well mixed, and finally, add a handful of chopped parsley, if desired. Uhmmm, delicious!!
