Pasta with Zucchini and Stracchino

Pasta with Zucchini and Stracchino, a creamy and flavorful vegetarian main dish that’s very easy to prepare.

A perfect main dish to serve on many occasions: one of those recipes to prepare in just over half an hour, perfect for a dinner with friends or a family lunch.

The preparation is really simple: I stewed the diced zucchini with a bit of onion in extra virgin olive oil, covered it with a lid, and let it cook slowly for about thirty minutes with a little pasta cooking water as it dried up. I also added a pinch of turmeric to give it a bit of color.

Then, I added the stracchino, which I gently melted, and then the pasta, which I stirred in for a few minutes with the sauce. This way the dish will be nice and creamy.

Instead of stracchino, you can use another creamy cheese, such as Philadelphia or gorgonzola, for a stronger flavor.

Ingredients

  • 11 oz pasta (I used mezze penne)
  • 3 tbsp extra virgin olive oil
  • 2 zucchini (small)
  • 2.8 oz stracchino (or creamy spreadable cheese such as Philadelphia)
  • ground turmeric (to taste)
  • 1/4 onion
  • 3 tbsp grated Parmesan cheese
  • salt
  • pepper

To make the Pasta with Zucchini and Stracchino you need:

  • 1 Pot
  • 1 Pan
  • 1 Chopper

Steps

  • First, in a sufficiently large pan, heat 3 tablespoons of extra virgin olive oil and the chopped onion and saute it. Then, add the diced zucchini, cook them over high heat in the pan for about 2 minutes, then season with salt and pepper.

  • Cover with a lid and cook for about 20 – 25 minutes over low heat. Add pasta cooking water as needed when it dries out. Add a dash of turmeric (if you like) and stir gently.

  • Meanwhile, place a pot with plenty of water on the stove and bring to a boil. When the water boils, add the pasta (I used mezze penne) and cook it for at least 11 minutes (according to the instructions on the package).

  • A few minutes before the pasta is fully cooked, add the stracchino in pieces to the pan with the zucchini, now cooked (they should be soft). Add a ladle of pasta cooking water and stir to obtain a smooth cream.

  • Drain the pasta al dente and pour it directly into the pan with the sauce, add the grated Parmesan cheese and stir for a few minutes. Here is the Pasta with Zucchini and Stracchino ready. Enjoy your meal!

Storage

If there are any leftovers (but there won’t be, I assure you), store the Pasta with Zucchini and Stracchino in the refrigerator and before consuming, add 2 – 3 tablespoons of water and heat it up.

Tips and Suggestions

You can replace the zucchini with other vegetables, such as eggplants, or add others. Instead of stracchino, you can use another creamy cheese, like Philadelphia or gorgonzola, for a stronger flavor. Also great with a sprinkle of aged cheese.
