Plaice Fillets with Speck and Sage, simple and tasty, made with thin plaice fillets, speck, and sage: an easy and quick recipe that both adults and children will love.

The recipe is very simple and quick. I laid out the speck, covered it with the plaice fillets and sage, then rolled them up into rolls. I cooked them in a pan with white wine, chopped onion, and a tablespoon of flour. It’s practically the fish version of saltimbocca, slightly revisited.

If you wish, you can also cook them in the oven at 350°F for about 15 minutes.

Ingredients

  • 5 fillets plaice (frozen or fresh)
  • 5 slices speck
  • as needed sage
  • 4 tablespoons extra virgin olive oil
  • 1/2 onion
  • 1/2 cup white wine
  • 1 tablespoon flour
  • to taste salt

  • 1 Pan non-stick

Steps

  • First, lay out 1 slice of speck on the cutting board or on a plate (if they are small, slightly overlap 2 slices), then add a plaice fillet, place 2 – 3 sage leaves on top without overlapping them; proceed the same way with the other fillets.

  • Gently roll the prepared fillets and secure them with wooden toothpicks.

  • Heat the oil in a non-stick pan and brown the plaice fillets until golden. Add the finely chopped onion, pour in the white wine and let it evaporate.

  • Salt lightly, remember that speck is already quite salty, so don’t overdo it. Then, lower the heat to the minimum, add the flour, cover the pan, and let it cook for another 5 – 6 minutes.

  • If the fillets are rather thick, cook them for a few more minutes.
