Ingredients
- 4 potatoes
- 10.5 oz green beans (fresh)
- 2 eggs
- 2.1 oz Grated Grana Padano (or Parmesan)
- chopped parsley (fresh)
- 1 clove garlic
- extra virgin olive oil
- 1 mozzarella
- to taste salt
- to taste pepper

Steps
First, cook the potatoes after thoroughly washing them, in a pot with plenty of cold water and bring to a boil, cook them for about 30 – 35 minutes (depending on size). If you want to be faster, cook them in the pressure cooker.
Meanwhile, trim and wash the green beans and boil them in salted water for about 10 – 15 minutes.
Once the vegetables are cooked (the green beans should not be too soft), pass the potatoes through a potato ricer and cut the green beans into slices about half an inch thick. Chop the parsley and finely chop the garlic.
At this point, place a frying pan on the stove with a little oil and the clove of garlic. Add the green beans and chopped parsley. Salt and let it season for a few minutes, then let cool.
Then, pour the green beans into a mixing bowl with the mashed potatoes, add the eggs and grated Grana Padano (or Parmesan), adjust the salt and pepper and mix well.
Then, take a baking dish, oil it and sprinkle it with breadcrumbs.
Pour half the mixture into the baking dish, add the sliced mozzarella, cover with the remaining mixture, sprinkle the surface with a light layer of breadcrumbs, a drizzle of oil and bake at 355°F for about 35 – 40 minutes.
