HOW TO PREPARE POTATOES AND SAUSAGE IN THE PAN

  • First, in a large pan heat 4 tablespoons of extra virgin olive oil, add the onion, finely chopped, and let it turn golden, then add the sausage, cut into pieces: let it brown for a few minutes, stirring occasionally.

  • Then, add 1/4 cup of white wine and let it evaporate, then remove the sausage from the pan and set aside, covered.

  • Meanwhile, peel the potatoes, wash them, and cut them into pieces, then put them in the pan where you cooked the sausage, adjust with salt, cover with a lid, and cook over medium-low heat for about 25 – 30 minutes (depending on the size of the potatoes). Stir occasionally, making sure they don’t burn.

  • About 5 minutes before the end of cooking, add the sausage, remove the lid, and sauté (if necessary, add a bit of oil) until the flavors blend well. Finish by adjusting the salt (if necessary), sprinkle with a pinch of pepper and, if you like, with thyme.
