Ingredients

  • 1 roll puff pastry
  • as needed dried beans (for blind baking)
  • 1 package strawberries
  • 1 banana
  • spray gelatin
  • as needed powdered sugar
  • 1 cup milk
  • 2 egg yolks
  • 2 oz sugar
  • 0.7 oz flour
  • 1/2 pod vanilla
  • 1 tbsp whipped cream

Steps

  • First, preheat the oven to 356°F.

    Take the puff pastry out of the fridge and let it sit at room temperature for at least 5 minutes, then unroll it. Using a knife (or a pizza cutter), cut out a heart shape, then externally, cut a border about 1 inch wide and roll it up, pinching it with your fingers.

  • Place the heart with the parchment paper on the baking tray, prick the surface with a fork, cover with parchment paper and then with the dried beans and bake in a preheated, ventilated oven for about 20 minutes.

  • Remove from the oven and let cool completely.

  • While the pastry is baking, you can focus on the custard. Heat the milk in a saucepan, add 1/2 vanilla pod (cut it with a knife and extract the seeds) and bring to a boil. If you don’t like the taste of vanilla, replace it with the zest of 1/2 organic lemon.

  • In a bowl, beat the egg yolks with the sugar until the mixture becomes white, thick, and frothy. Gradually incorporate the sifted flour spoonful by spoonful to avoid lumps. Slowly pour in the boiling milk (removing the vanilla), stirring constantly.

  • Pour the mixture into a saucepan and put it on the stove, thickening it over low heat for at least 3-4 minutes. Remove the saucepan from the heat. Place the custard in a container and let it cool, stirring it occasionally so that a film does not form on the surface, and cover it with plastic wrap.

  • Once cold, add a large spoonful of whipped cream and mix well, then spread over the tart surface.

  • At this point, wash the strawberries, pat them dry with paper towels, slice them, and arrange them on the custard, then add the banana slices. Sprinkle the fruit with some powdered sugar and spray the gelatin to prevent it from browning.
