Ingredients for Raw Meat Balls

  • 10 oz beef (minced)
  • 1 1/2 lemon (the juice)
  • as needed extra virgin olive oil
  • 1 clove garlic (thinly sliced (optional) – if you like it, you can also increase the quantity)

  • as needed white pepper
  • 1.75 oz Parmesan Reggiano DOP (grated)
  • 1 bunch arugula
  • 1/2 lemon (for garnish)

Preparation of Raw Meat Balls

  • For the preparation of this dish, you need to get some very fresh high-quality raw meat.

  • Place the minced raw meat in a bowl.

  • Add the chopped garlic cloves, salt, and extra virgin olive oil.

  • Mix well: the oil should be well absorbed by the meat, which should not be too dry or too oily.

  • Add the pepper and the juice of half a lemon and mix well.

  • At this point, form balls with your hands. Mine weighed about 12 – 15 g each.

  • Round them well and roll them in grated cheese.

  • Place them one by one on a tray or serving dish, spacing them apart.

  • Finish the dish with small bunches of arugula and Parmesan flakes, and serve.
