Shortcrust Pastry Strudel with Peaches and Amaretti, perfect for breakfast or a snack. It looks like a strudel, but it’s actually a large shortcrust pastry cookie filled with peach jam, amaretti, and peach chunks.

Easy and quick, it’s really delicious! We devoured it for breakfast, with a cup of yogurt. I’ll definitely make it again, maybe with other types of fruit and/or jam.

Ingredients

  • 5.3 oz butter (at room temperature)
  • 2 cups flour
  • 0.5 cups powdered sugar (or granulated)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1/2 lemon (zest grated)
  • 5.3 oz peach jam
  • 2 peaches (ripe but firm)

To make the Shortcrust Pastry Strudel with Peaches and Amaretti you need:

  • 1 Stand Mixer
  • 1 Pastry Board

Steps

  • First, prepare the shortcrust pastry following all the steps you find in my recipe here.

  • Once the resting time has passed, preheat the oven to 350°F in static mode. Meanwhile, peel the peaches and cut them into chunks: let them drain in a colander or sieve.

  • Then, place the shortcrust pastry dough on a sheet of parchment paper and roll it out with a rolling pin to a thickness of about 0.2 – 0.3 inches, forming a rectangle. If you see it starts to crumble, work it a bit with your hands before rolling it.

  • Place the peach jam in the center, the peach chunks, and a handful of coarsely crumbled amaretti; with a knife, cut strips on both sides of the pastry.

  • Braid the strips, alternating from right to left, overlapping them slightly; then seal the ends and try to close any gaps.

  • Place the strudel directly with the parchment paper on a baking tray and bake in the preheated oven for about 30 minutes or until the pastry is golden. Remove from the oven, let it cool and then dust with powdered sugar.

– During baking, if the strudel is not properly sealed, some jam might leak out, but it’s not a problem: once cold, simply remove it with a knife without compromising the success of the dessert.
