This recipe is really quick and super clever. It is perfect for using up leftovers. I put all the ingredients in the stand mixer to knead, and once I obtained a smooth and homogeneous dough, I divided it into 2.
I rolled out the first one and filled it with ham and scamorza (here you can obviously use the ingredients you prefer: speck and brie, tomato and mozzarella, salami, prosciutto, or make it vegetarian, like the one with onions, zucchini, and scamorza), covered it with the second one, and then cooked the focaccia in a skillet.
In less than half an hour, dinner is ready! You can accompany the stuffed focaccia with a nice salad, such as Green Bean, Potato, and Shrimp Salad or Mushroom, Celery, and Walnut Salad.
Another tasty idea for dinner is the Skillet Focaccine. However, they require at least an hour and a half of leavening. If you’re not in a hurry, they are a great alternative.

- 2 1/2 cups flour
- 2/3 cup water (at room temperature)
- 3 tablespoons extra virgin olive oil
- 1/2 packet instant yeast for savory preparations (or 1 teaspoon of baking soda)
- 1 1/2 teaspoons salt
- 5 1/4 oz cooked ham
- 3 1/2 oz scamorza cheese

Steps
Making the Skillet Focaccia without Leavening is simple.
First, put all the ingredients in the stand mixer bowl and start kneading.
Then, knead for about 5 – 7 minutes, until you get a smooth and compact dough, well-bound.
Then, form a loaf and divide it into two. Using a rolling pin, roll out the first piece to obtain a circle quite thin (about 1/16 – 3/32 of an inch).
Cover it first with the ham (leaving about 3/8 of an inch from the edge) and then with the scamorza cut into pieces.
Roll out now with the rolling pin the second piece and place it on top: seal the edges well to prevent the cheese from escaping during cooking.
Next, place a large enough non-stick skillet (mine is 11 inches) on the stove, slightly oil it, and once hot, gently place the focaccia; then, cover with a lid and let it cook for about 5 minutes.
Then, flip the focaccia using a lid and let it cook covered for another 5 minutes. Check the cooking, it should be beautifully golden.
