Ingredients for two cups

Steps

  • First, gently wash the strawberries, remove the stems, and cut them into small cubes. Place them in a bowl, add the sugar, the lemon juice, and mix. Let them rest for about 15 minutes so they release their juice.

  • Take 2 cups and start creating the first layer. Crumble 1 or 2 amaretti with your hands and cover the bottom of the cups, pour a teaspoon of strawberry juice on top to moisten them, then cover with a layer of Greek yogurt which you have previously mixed well to make it creamy and smooth (if you want, you can add a teaspoon of powdered sugar – I didn’t).

  • Cover with diced strawberries (and some of their juice) and amaretti. Repeat the layers, alternating yogurt, strawberries, and amaretti, until the ingredients are used up or until the cups are filled (I only made 2 layers). To finish, place a layer of strawberries pieces on top of the yogurt and then sprinkle with a generous handful of crumbled amaretti.

  • Decorate each cup with a fresh mint leaf for a touch of color and fragrance. Serve the cups immediately to enjoy the crunchiness of the amaretti, or place them in the refrigerator for at least 30 minutes. In this case, the amaretti will soften slightly, absorbing some of the moisture from the yogurt and strawberries, for a still delicious result.
