Advice

– If the shortcrust appears too oily during kneading, it’s normal before refrigerating. However, if you can’t compact it, roll it on a floured board. Anyway, once removed from the fridge, it will be ready to roll out.

– If you have leftover shortcrust before baking, store it first in the fridge and then in the freezer in a food bag. It keeps in the freezer for 3 months. When you want to use it, just take it out of the freezer and place it in the refrigerator to thaw for about a couple of hours.
