Three-Cheese Pasta

Three-Cheese Pasta with fontina, parmesan, mozzarella, bacon, and cream. Creamy and tasty, this pasta is truly a delight.

This is the kind of pasta that Luca, my son, likes: rich, hearty, and creamy. He loves cheese, and paired with pasta, it’s truly amazing. I also added a pinch of sauce to give the dish a slightly more colorful appearance, and I must say it worked well.

I used fontina, sliced mozzarella, and parmesan (basically what I had in the fridge), but of course, you can use the cheese mix you prefer. Since it’s a very substantial first course, I paired it with a much lighter second course. Perfect with this Fennel and Apple Salad or with the Cauliflower and Potato Salad.

Ingredients

  • 6 oz pasta (casarecce, penne, mezzi rigatoni, pennette …)
  • 3.5 oz fontina (cut into cubes)
  • 2.8 oz bacon (cut into small cubes)
  • 1 oz grated parmesan
  • 1 oz mozzarella
  • 1 package cooking cream (or milk)
  • 0.7 oz butter
  • salt
  • 2 tablespoons tomato sauce (to taste – or tomato paste)

Steps

  • First, bring a pot with plenty of water to a boil. When the water boils, add the pasta (I used mezze penne rigate) and cook for at least 11 minutes (according to the directions on the box).

  • While the pasta cooks, prepare the sauce.

  • In a large pan, add 2 tablespoons of butter (or 2 tablespoons of extra virgin olive oil) and the bacon cut into small cubes. Then, put it on the stove over a low flame and let it cook slightly.

  • When there are only a few minutes left to the end of the pasta cooking, add the fontina cut into cubes and let it melt gently, helping with a wooden spoon, then also add the mozzarella cut into small pieces, the parmesan, and the cream, and finally 2 tablespoons of tomato sauce already ready, to give it a more colorful appearance.

  • Once the pasta is cooked, drain it with a slotted spoon and pour it directly into the pan with the cheese, stir and toss for a few minutes to mix everything well.

  • Melt the mixture together for 1 – 2 minutes to let it flavor well. Sprinkle with more grated parmesan and serve. Here is the Three-Cheese Pasta ready. Enjoy your meal!

Storage

You can store the three-cheese pasta in the refrigerator, closed in an airtight container or covered with plastic wrap.

Tips and Variations

If you want to make this pasta even more delicious, add 50 g of sweet gorgonzola to the cream and let it melt… a delight! Or replace the cream with soft cheese like certosa, philadelphia, or robiola.
