HOW TO PREPARE TOMATOES WITH GREEN SAUCE AND ANCHOVIES
First, make the green sauce. Follow my recipe here, it’s very simple. Once ready, pour the obtained mixture into a glass container and cover with extra virgin olive oil (or olive oil).
Then, wash the tomatoes and pat them dry with a kitchen towel; with a sharp knife, cut them into slices about 0.6 – 0.8 inches thick and place them on a serving plate.
Meanwhile, put the mayonnaise in a bowl, add 5 – 6 tablespoons of green sauce, and mix. Adjust the amount of mayonnaise to your liking. Insert the obtained mixture into a pastry bag, cover the tomatoes, and finally, add the anchovy fillets.
