Vegetable Fritters

Vegetable fritters, they are made in a few minutes and are too good! Everyone loves them, both adults and children.

The preparation is very simple: I used my recipe for Delicious fritters with only 3 ingredients, adding the vegetables after grating and squeezing them well.

I used potatoes and carrots (I only had those in the pantry), but the beauty of this recipe is that we can make them with any vegetables we want or have available. It’s a great way to get children to eat vegetables and it’s also a great dinner saver.

Ingredients

  • 1 carrot
  • 1 potato
  • 1/2 onion
  • 3/4 cup flour
  • 2/3 cup water
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon extra-virgin olive oil
  • to taste salt
  • to taste olive oil (for frying)

  • 1 Grater
  • 1 Chopper

Steps

  • First, peel the potato and the carrot, wash them and grate them with a medium-large hole grater or with an electric vegetable chopper: squeeze them well to remove excess water.

  • Finely chop the onion with a pull-cord chopper (practical and very fast) and add it to the other vegetables.

  • Then, put the flour in a large enough bowl, add the water, the extra-virgin olive oil and mix with a fork to get a smooth, lump-free mixture.

  • At this point, pour the vegetables into the batter, add the salt, the Parmesan cheese and mix well. If too liquid, add a tablespoon of breadcrumbs.

  • Meanwhile, heat the oil in a pan, once hot, add the vegetables with the help of a spoon and fry until golden, turning them occasionally.

  • Here are the ready vegetable fritters. Enjoy your meal.

Storage

I recommend eating the vegetable fritters immediately. If they are left over, store them in the refrigerator, closed in an airtight container, and reheat them in the microwave before consuming.
