There are desserts that, more than others, can instantly bring us into the Christmas holiday atmosphere, and besides the classic Pandoro and Panettone, nougat is truly indispensable!

Today’s version, with puffed rice, is perfect for lovers of “smart” desserts, those you prepare in minutes but win everyone over at the first bite!

white nougat with puffed rice

Ingredients

  • 16 oz white chocolate
  • 16 oz 50% dark chocolate
  • 7 oz Nutella®
  • 3.5 oz puffed rice

Tools

  • Loaf pan
  • Bowl
  • Brush
  • Spatula

Preparation

  • Melt the white chocolate in the microwave or in a slightly heated oven, or using a double boiler.

  • Once melted, take a silicone loaf pan (about 10-11 inches) or a disposable aluminum one.

  • Using a brush, perfectly coat both the bottom and the sides of the mold with half of the melted white chocolate.

  • Set aside the rest of the melted chocolate as you will need it to cover the nougat. Place the mold in the fridge to set for about 15 minutes.

  • In the meantime, melt the dark chocolate and once melted, add the Nutella and mix with a ladle.

  • Let it cool slightly and then add the puffed rice to the dark chocolate and Nutella. Mix well.

  • Take the mold out of the fridge, pour all the obtained cream inside, level with a ladle, and put it back in the fridge for another 10-15 minutes.

  • After the time has passed, take the mold out of the fridge again and cover it with the white chocolate that you had set aside.

  • If in the meantime the chocolate has hardened, you just need to put it back in a double boiler or microwave and then use it.

  • Level with a spatula and put the mold back in the fridge to set for at least a couple of hours.

  • Leave it in the fridge until ready to serve. At that point, gently remove it from the mold and cut it into slices.

  • Your chocolate nougat with puffed rice is ready to be enjoyed! Soft and incredibly delicious, it will be a pleasure to eat!

  • Can I add nuts or flavors?

    In general, yes, you can add nuts (almonds, hazelnuts, pistachios, walnuts), and not many changes are needed, but there are some important tips to maintain the perfect structure and not to break it.

    🔧 1. Watch the quantities
    This recipe is balanced with only puffed rice. If you add nuts, you need to avoid making the mixture too dry.
    👉For every 1.75 oz of added nuts, increase the melted chocolate by 1.5 oz.
    This helps to “bind” all ingredients well.

    🔥 2. Lightly toast the nuts
    Toast almonds/hazelnuts/pistachios for 8–10 minutes at 300°F (or 2–3 minutes in a pan) to improve crunchiness and flavor.
    ⚠️ Important: let them cool completely before mixing with the chocolate, otherwise, it may melt the structure.

    🍫 3. Choose the right nuts
    Ideal: whole or coarsely chopped almonds and hazelnuts.
    Not recommended: nuts that are too oily (like pecans in large quantities), as they may slightly “soften” the chocolate.

    🥄 4. How to add them
    Add the nuts last, so they are well distributed.

    For an aromatic touch, you can add orange zest while mixing the warm chocolate.

  • How long should it rest before cutting?

    Letting it cool in the refrigerator for at least 2 hours is crucial for the chocolate to solidify and for the nougat to maintain perfect form and texture when cut.

  • Can I use just one type of chocolate (only dark or only white)?

    Yes! Although the combination of white and dark chocolate provides a more interesting contrast of flavor and texture, you can use only dark chocolate for a more intense nougat or only white chocolate for a sweeter version, still retaining the puffed rice.

  • Is Nutella indispensable? Can I substitute it?

    Nutella (or hazelnut spread) adds smoothness and flavor; you can substitute it with milk-free hazelnut cream, or with peanut butter or pistachio cream, for a different yet delicious taste.

  • How to store chocolate nougat with puffed rice?

    Chocolate nougat keeps perfectly at room temperature.
    Follow these guidelines to keep it crunchy and compact:
    ✔️ Storage method
    At room temperature for 10–12 days, in a cool and dry place, away from heat sources.
    Store it in an airtight container or wrap it in plastic wrap.
    If it’s very hot at home (for example, near the heaters), you can store it in the fridge, but take it out 10 minutes before serving: it will become just perfectly soft again.
    ✔️ Freezing
    Not recommended: puffed rice would lose its crunchiness.
    ✔️ If you add nuts or dried fruit
    Storage does not change, but it’s better to prefer well-toasted nuts to avoid moisture release;
    in this case, it lasts about 7–8 days at most.
