Ingredients
- 13 oz dry cookies (or ladyfingers or pavesini, gluten-free for those intolerant)
- 3 oz dark chocolate
- 7 oz cream cheese (or mascarpone or ricotta, lactose-free for those intolerant)
- 1/4 cup orange juice
- to taste orange zest (preferably organic)
- 1/3 cup sugar
- to taste rum flavor (1 vial, or orange flavor)
- sugar (to taste for decoration)
Tools
- 1 Bowl
- Spatula
- Citrus Juicer
- Grater
Preparation
First, crumble the cookies without turning them into flour. Those who are intolerant can use gluten-free biscuits.
I used two types of dry cookies I had in my pantry.
Of course, you can choose any type of biscuit, or ladyfingers or pavesini.
You can put them in a food bag and crush them with a rolling pin.
Place the crushed cookies in a bowl. Melt the dark chocolate in a double boiler or in the microwave.
Pour the melted chocolate directly over the crumbled cookies (if you prefer, you can use milk chocolate instead).
Add the cream cheese and sugar. Again, we can use lactose-free cheese if we have intolerances.
Instead of cream cheese, mascarpone or ricotta can be used, provided it’s well drained.
Grate the zest of half an organic orange and add it to the other ingredients.
Also pour in the orange juice and a vial of Rum flavor (only if you like it). Use a spatula to mix everything inside the bowl.
When the dry ingredients have absorbed the liquid ones, knead the mixture with your hands to compact it.
You should get a well-mixed dough that is not too mushy. Only if necessary, add more crumbled cookies, little by little, until you achieve the right consistency.
If instead, the dough is too dense, add a few more drops of orange juice.
At this point, we can move to the final stage! To form the balls, take small portions of the mixture.
If it’s too hot in the house and you’re having trouble working the mixture with your hands, you should first let it rest in the fridge for at least 30 minutes and then proceed.
Gradually form the chocolate truffles (preferably of the same size) until you finish the dough.
Roll each truffle in granulated sugar and place them in paper cups or simply on a tray.
Et voilà, there’s nothing more to add! Your chocolate truffles are ready!
You can enjoy them right away or keep them in the fridge until serving.
They last for about 2-3 days in the refrigerator, but I assure you they’ll be gone much sooner!!
In this way, it will be easier to give a nice round shape to the truffles.
