Cold Pasta with Arugula, Tuna, and Cherry Tomatoes

It’s a rich and tasty first course, served as a single dish. Whether it’s pasta or rice, cold salad can also be prepared at the last minute! The right choice to recycle the ingredients we have in the fridge!

Ingredients

  • 5.6 oz pasta
  • 1.25 cups cherry tomatoes
  • 2.8 oz canned tuna (or in water, 1 can)
  • 1.8 oz cheese (to taste)
  • 1.4 oz arugula
  • 1 egg (hard-boiled)
  • as needed garlic (only if desired)
  • as needed olive oil
  • as needed salt
  • Few leaves basil

Steps

  • First, put an egg in a small pot with cold water.

  • Turn on the stove at a very low flame. Bring to a boil.

  • At that point, when the water boils, count 9 minutes of cooking.

  • Once the time has elapsed, take out the egg and let it cool slightly.

  • Then shell it, being careful not to break it, and slice it.

  • Separately, cook the pasta in plenty of salted water (choose the shape you like best!)

  • While the pasta is cooking, wash the cherry tomatoes well (use both yellow and red to create a nice contrast!).

  • When the pasta is ready, drain it in a large enough bowl.

  • Immediately dress with a couple of tablespoons of olive oil and mix.

  • This step is important because it prevents the pasta from “sticking”.

  • Let the pasta cool. Then, season it.

  • Add the diced cherry tomatoes and a can of tuna (if in oil drain well).

  • The arugula, washed and patted dry with paper towels, and the cheese cut into chunks.

  • For the cheese, choose the one you prefer (provolone, Galbanino, Emmentaler, etc., etc.).

  • If you like garlic, use just a little, finely chopped.

  • A few fresh basil leaves torn by hand to perfume everything.

  • Dress with olive oil and, finally, decorate with the slices of hard-boiled egg.

  • And voilà, your delicious and fresh dish of cold pasta with arugula, tuna, and cherry tomatoes is ready!
