Ingredients

  • 12.7 oz penne pasta
  • 7.1 oz tuna in oil
  • 14.1 oz cherry tomatoes (yellow and red)
  • 3.5 oz black olives (pitted)
  • red onion (optional)
  • olive oil
  • chopped parsley
  • salt

Preparation

  • First, wash the cherry tomatoes thoroughly. I used both yellow and red cherry tomatoes, but you can easily use only red or only yellow ones, according to your taste and availability.

  • Cut them into halves or quarters or dice them (as you prefer). Slice a bit of red onion thinly. Also, cut the black olives in half.

  • Take a frying pan, add a few tablespoons of olive oil, and brown the onion over very low heat. Then add the cherry tomatoes and cook them over medium heat for about 5 minutes.

  • After 5 minutes, add the tuna that has been previously drained (if you chose the one in oil, otherwise you can use natural tuna).

  • Also, add the olives, adjust with salt, add a handful of fresh chopped parsley, a bit of chili pepper (if you like), and continue cooking for another 5 minutes, just enough time to slightly wilt the cherry tomatoes.

  • Meanwhile, bring the water to a boil in a large saucepan. Once boiling, salt it and add the pasta. I chose penne, but you can use any shape you prefer.

  • Cook and drain al dente into the pan with the sauce. Mix for a minute, turn off the heat, garnish with a nice handful of fresh chopped parsley, and serve!
