Pressure Cooker Chicken Thighs with Mushrooms and Peppers

Today we are serving a nice plate of chicken thighs cooked in a pressure cooker! Tender and flavorful, accompanied by mushrooms and peppers. Remember the side dish of vegetables cooked in a pressure cooker? It was a real hit to bring it to the table! The electric pressure cooker OLLA was a real discovery! Ingredients

  • 2.2 lbs chicken thighs (6 thighs)
  • Half yellow bell pepper (about 3.5 oz)
  • Half red bell pepper (about 3.5 oz)
  • Half red onion
  • 2 cloves garlic
  • 1 sprig rosemary
  • 5.3 oz mushrooms (frozen mixed)
  • to taste olive oil (three-four tablespoons)
  • to taste salt
  • to taste sweet paprika (only if you like it)
  • 1 carrot (medium-sized)
  • 1.4 oz white wine

Steps

  • Clean the vegetables and cut them into medium-sized chunks.

  • As for the mushrooms, I used frozen ones. Leave them in the freezer until it’s time to put them in the pot.

  • If you use fresh ones, clean them well and slice them.

  • At this point, set up the electric pressure cooker.

  • Pour three-four tablespoons of oil into the pressure cooker basin.

  • Set the Grill menu for 10 minutes and wait for it to reach the temperature.

  • I left the preset temperature for the type of program, but you can increase or decrease it.

  • Insert the chicken thighs and the two garlic cloves. Sauté the meat on all sides.

  • Turn very often and keep an eye on the garlic; when it becomes too colored, remove it.

  • Use a wooden or silicone ladle so you don’t risk scratching the pan.

  • Adjust the salt and sprinkle with sweet paprika (if you don’t like it, replace it with black pepper).

  • After finishing the “grill” program, reset everything and set it for 10 minutes on “fry” mode.

  • Insert all the vegetables including the still frozen mushrooms and let them cook.

  • After 5 minutes pour about 1.4 oz of white wine and let it evaporate.

  • Continue for the remaining 5 minutes, stirring often with a ladle.

  • After the “fry” menu, pour half a glass of water and set the “stew” menu for 10 minutes.

  • Place the lid in the safety position by hermetically sealing the knob and valve.

  • Let it cook WITHOUT TOUCHING.

  • Once the “stew” program is finished, the pressure cooker Olla alerts us with a voice command.

  • Open the valve to release the steam without opening the lid and with maximum care.

  • ONLY when the steam has completely escaped, remove the lid with a cloth.

  • When removing the lid, do not drain the water deposited on the edges inside the basin.

  • At this point ONLY IF NECESSARY, reprogram “sauté” mode at 200 degrees for about 5 minutes.

  • The vegetables may release more liquids than expected, especially if frozen.

  • In that case, to dry the liquids a bit, sauté the whole thing WITHOUT LID for just 5-6 minutes.

  • Your stewed chicken thighs in a pressure cooker are ready to be served at the table.

  • Soft, succulent, and with a delicious creamy sauce that is truly irresistible!

  • Pour the oil into a large pan and add the garlic cloves.
