Today we prepare a dessert together that requires zero effort!! No blender or rolling pin, you don’t have to turn on the oven and guess what: no butter and no eggs added!

A quick recipe to make a no-bake dessert so delicious it will win you over!!

These are delicious Rum Truffles, with an irresistible aroma that captivates you! Perfect if you need to prepare a dessert at the last minute!

Truffles are usually made using very simple base ingredients like biscuits, spreadable cheese, or other dairy products. They can be personalized in countless ways, decorated as we like best, even depending on the occasion we are preparing them for.

Moreover, these sweets can also be consumed by those who are intolerant to gluten or lactose. Just use gluten-free biscuits or lactose-free spreadable cheese (specifically mascarpone).

I often prepare truffles at home so much that I thought of creating a collection where I included all my best truffles!

It is the ideal dessert for an after-meal treat, to be served after the Sunday lunch, for a romantic dinner or during an aperitif with friends at home. But especially perfect to bring to the table during holidays and celebrations!

For example, during the Christmas holidays, we will certainly have several panettone or pandoro to use up, and we can prepare some really delicious truffles.

While at Easter, we could use a nice colomba, classic or already stuffed.

Ingredients

  • 4.9 oz Pavesini (cocoa or your favorite cocoa cookies)
  • 1.8 oz Sugar
  • 8.8 oz Mascarpone
  • 1 tbsp Nutella
  • 1 oz Rum
  • Hazelnuts (about 4.2 oz roughly chopped or ready-made granules)

Preparation

  • To make your super delicious Rum Truffles you will need just a few minutes and the result will be amazing!

  • First, crumble the cocoa Pavesini. You do not want to make a flour, so I recommend using the back of a spoon to crush them well, without using the food processor.

  • Set aside the Pavesini and take another bowl. Put the mascarpone and sugar inside and work with a fork until you get a cream.

  • Add the Rum, 1 oz of previously chopped hazelnuts, the sugar, a generous tablespoon of Nutella, and mix. Now pour the crumbled Pavesini into the bowl.

  • Combine everything first with the help of a spoon and then with your hands until you get a rather compact ball.

  • The mixture is ready, you just need to form your Rum Truffles. Take a small portion, adjusting by eye for the preferred size.

  • Roll the small portion between your palms until you get a well-defined ball. Place it on a tray and continue in the same way until the mixture is finished.

  • Roughly chop the remaining hazelnuts, put them on a plate, and roll each ball obtained in the granules to decorate and make them even more beautiful and tasty!!

  • There you go, your super easy and delicious Rum Truffles are ready to be enjoyed and offered! Your guests will appreciate them, and you will be very satisfied!

  • The number of truffles you can obtain varies based on the size of each piece, the smaller they are, the more you will get and vice versa.

  • What cookies are best to use for making truffles?

    I use whatever I find in the pantry! Whether they are ladyfingers, Pavesini, dry biscuits, Digestive, etc. In this case, I used cocoa biscuits, but if you don’t have them at home, there’s no need to go out and buy them because you can crush what you have and add two teaspoons of unsweetened (or sweetened) cocoa powder.

  • What can I use instead of mascarpone?

    You can use ricotta, robiola, or spreadable cheese. No yogurt because the mixture would not have the same consistency. You could also use half ricotta and half spreadable cheese or robiola, etc. As for ricotta, it’s better to use it only if it’s dry, otherwise strain it well.

  • How do you store biscuit truffles?

    We can store the truffles in the fridge for 3-4 days covered with plastic wrap or placed in a container to prevent them from absorbing other odors. We could also put them in the freezer and enjoy them as if they were ice cream bonbons.
