Today we bring to the table a nice dish of Whole Wheat Spaghetti with Tuna, Zucchini, and Toasted Bread Crumbs. Simple, genuine, and very tasty!
I often find myself with very little time to prepare my lunch! Does it happen to you too?! When you’re doing a thousand things, it’s almost inevitable! That’s why I like to be practical in these cases! Without giving up taste, I choose easy and quick dishes!
Just like this tuna and zucchini spaghetti with toasted bread crumbs. An economical dish, too tasty, and quick to make! With the arrival of the beautiful season, one of the vegetables I consume the most is zucchini!
You can prepare many delicious recipes with this vegetable rich in properties! Did you know that 100 gr of zucchini (raw) contain only 11 calories? Even among all vegetables, they are the ones that contribute the least calories!
Since I love pasta with tuna, I decided to enrich it with zucchini and toasted bread crumbs! A simple and delicious dish! If you love them too, I recommend trying my Zucchini in oil, crunchy and delicious! Or this amazing Crumble with zucchini, stracchino, and cooked ham.

Ingredients
- 14 oz whole wheat spaghetti (or preferred pasta shape)
- 14 oz zucchini
- 11 oz canned tuna in oil (4 cans of 3 oz each)
- 3 tbsp olive oil (approximately)
- to taste breadcrumbs (from stale bread, 2-3 slices)
- to taste chili pepper (only if you like)
- to taste salt
- to taste chopped parsley
- 2 cloves garlic
Preparation
First, place the tuna in a sieve to drain the preserving oil.
If you prefer, you can also use natural tuna.
Now move on to the zucchini. Wash them well and dice them without removing the peel.
Take a fairly large pan and pour in about 3 tablespoons of olive oil.
Brown a couple of garlic cloves and a handful of dried (or fresh) chili pepper.
If you don’t like chili pepper, you can simply omit it 😉
Cook the zucchini over medium heat without a lid for about 10 minutes.
Adjust the salt, and in the last 3 minutes, add the drained tuna and let it flavor.
Your sauce is ready. Turn off the heat and set aside.
Take a couple of slices of stale bread and crumble the breadcrumbs with your hands.
In a small pan, place a tablespoon of olive oil and add the crumbled breadcrumbs.
Toast the breadcrumbs over very low heat and stir often to avoid burning!
Meanwhile, boil the pasta in plenty of salted water.
Drain it al dente (or as you prefer) into the pan and mix everything to combine.
Lunch is ready! Serve the Whole Wheat Spaghetti with Tuna and Zucchini.
On each plate, sprinkle a generous handful of toasted breadcrumbs and fresh chopped parsley.
