I love fish-based dishes, especially main courses! What I propose to you today is a simple and genuine recipe, also suitable for those who are on a diet. It is easy to cook, and has a quick cooking process. In fact, in less than 15 minutes, the dish is ready to go on the table! The perch fish, also known as European perch, is a freshwater fish with exquisite meat. It lends itself to the creation of numerous dishes, from main courses to second courses, and it is truly tasty. I often use it; for example, I like to prepare it baked with potatoes or with cherry tomatoes. An excellent healthy, genuine, and economical second course. Today, however, I propose a nice tasty but delicate main course. Let’s see together how it is prepared!

Ingredients
- 1.5 cups pasta (format of choice)
- 5 oz Perch Fish
- 1 zucchini (medium)
- 1 cup cherry tomatoes (or grape tomatoes)
- 2 tablespoons olive oil (about 10-12 grams per person, suitable dose for those on a diet)
- to taste salt
- A few leaves basil
- to taste pepper (only if you like)

Steps
For the preparation of this first course, I used perch fish fillets without skin and bones.
I find them from my trusted fishmonger already cleaned and ready to use, definitely more convenient!
Once you have the cleaned fish, cut it into cubes. Then wash the vegetables (zucchini and cherry tomatoes).
Cut the zucchini into small cubes without removing the skin and halve the cherry tomatoes.
Finely slice (or grate) half an onion, put it in a pan, and add the olive oil.
Let it soften for a couple of minutes over low heat, then add the zucchini.
Slightly increase the heat and let them cook for about 5 minutes.
Then add the cherry tomatoes and continue for a couple of minutes. Finally, add the perch fish.
Only at this point, adjust the salt and add a pinch of pepper, if you like.
A few basil leaves to scent our dish and continue cooking for another 5 minutes.
Meanwhile, bring water to a boil and add the pasta.
Once ready, drain into the pan with the sauce, mix, and serve on plates.
