Ingredients
- 2 cups all-purpose flour
- 2 cups apples (peeled and cleaned + 1 apple for garnish)
- 2/3 cup sugar
- 1/2 cup sunflower seed oil
- 3 eggs
- 1/2 lemon (juice and grated zest)
- a pinch of salt
- 1 pinch cinnamon powder (optional)
- 1 packet baking powder (1 packet)
- as needed powdered sugar
Steps
To make the lactose-free apple bread, you can also use the Bimby, which will make the recipe easier, or any blender.
Peel and clean the apples. Blend 2 cups with the eggs, lemon juice, and grated zest for 20 seconds at speed 5. Set aside the remaining apple to garnish the dessert.
Add the sugar, oil, flour, a pinch of salt, cinnamon, and the packet of baking powder to the blended apples and blend again for 30 seconds at speed 4.
Pour the mixture into a mold, after spraying the release agent, slice the reserved apple and place it on top of the dessert.
Bake the lactose-free apple bread in a preheated oven at 350°F for about 40 minutes, in the lower middle part of the oven. Do the toothpick test to check if it’s done, and after removing it from the oven, finish with a dusting of powdered sugar.
