BAKED CRISPY PUMPKIN

Baked crispy pumpkin is one of the quickest and tastiest recipes to better appreciate the legendary pumpkin. Just cut the pumpkin, coat it in breadcrumbs, season it with spices, olive oil and put it in the oven. With a few ingredients, you will make a seasonal side dish, very tasty, and above all simple and economical.

Ingredients

  • 1.3 lbs pumpkin (net, already cleaned)
  • 1 cup breadcrumbs
  • 0.14 cup grated cheese (Parmesan or Grana Padano)
  • to taste garlic powder + rosemary powder
  • 1 clove of garlic + 1 sprig of rosemary
  • to taste olive oil + ground black pepper

Preparation

  • 1 – Clean the pumpkin from the skin and its interior and cut it into pieces. Make medium-sized cubes, not too small, and put them in a bowl. Season them with olive oil and salt.

    2 – In another container, mix together the breadcrumbs, grated cheese, a sprinkle of garlic powder and rosemary, a pinch of ground black pepper.

    3 – Take the pumpkin cubes and toss them in the breadcrumb mixture. Mix them well to coat evenly, this will be the coating for our pumpkin.

    4 – Place a sheet of parchment paper on the baking tray and lightly oil it, arrange the pumpkin pieces on top and drizzle a bit more oil over them. Sprinkle the pumpkin with fresh rosemary and place a whole clove of garlic on the side to flavor the pumpkin.

    5 – Bake in a preheated oven at 390°F (200°C) for 20 minutes, until cooked and golden. If you want to give it a quick grill, go ahead, 5 minutes on the top rack of the oven and your crispy pumpkin is ready.
