Ingredients
- 1.3 lbs fresh anchovies
- 1.5 cups breadcrumbs
- 1/2 lemon zest (grated)
- to taste parsley, salt, pepper, turmeric
- 1 cup water
- 2/3 cup white vinegar
- to taste olive oil
Steps
Wash and clean the anchovies by removing the head, guts, and central bone. Open them and rinse them again, then set them aside.
On a plate, place the breadcrumbs, chopped parsley, grated lemon zest, salt, pepper, and a pinch of turmeric to give color to the breading, then mix the ingredients well.
Coat the anchovy fillets in the aromatic breadcrumbs on both sides, and as you finish, place them on a non-stick baking sheet lined with parchment paper.
Drizzle the breaded anchovies with a little olive oil and bake in a preheated oven at 350°F for a maximum of 10-15 minutes.
Meanwhile, prepare the marinade solution by placing water and vinegar in a container. When the anchovies are cooked, remove them from the oven, let them cool, and layer them in the liquid.
Let them marinate for 1 hour, then drain and serve them. They can be stored in a closed container for a week or more and are excellent as a main course or appetizer.
