Ingredients
- 3 1/3 cups Manitoba flour (about 14 oz)
- 1 2/3 cups 00 (tipo 00) flour (about 7 oz)
- 1 1/4 cups water
- 0.9 oz fresh yeast (1 cake)
- 2 1/2 tsp sugar
- 1 2/3 tsp salt
- as needed olive oil
- as needed re-milled durum wheat semolina (for dusting)
Preparation
1 – In a large bowl place the lukewarm water and dissolve the yeast with the sugar.
Add the 00 flour and briefly knead the mixture. Cover the bowl with plastic wrap and let rest for 20–30 minutes.
2 – After the resting time, add the Manitoba flour and the salt to the mixture. Work the dough for a few minutes.
Shape into a firm, smooth ball, brush it with oil, then cover with plastic wrap and let rise for about 1 hour.
3 – When the dough has risen, divide it into 10 equal parts and form small balls.
Flatten the dough balls to form round, slightly flattened rolls, then sprinkle the tops with re-milled durum wheat semolina.
4 – Place the rolls on a non-stick baking sheet, cover them with a cloth and put them in the turned-off oven to proof again for another 30 minutes.
5 – Finally, turn on the oven, preheat it, and bake the rolls for 10 minutes at 392°F, until cooked and lightly golden.
