This delicious carrot, almond, and orange bundt cake with air fryer will please everyone, adults and children alike, but it’s especially great for a healthy breakfast or a joyful snack. Soft, tasty, and perfectly moist.
Everything made with an air fryer can also be replicated in a traditional oven, just double the quantities for a larger pan. This delicious cake is easy to make and cooks in 30 minutes, with some air fryers under 1500w it might take an additional 5 minutes, but the bundt shape really helps in ensuring uniform cooking, especially if you use a good quality aluminum pan (I used this Agnelli bundt pan 20x20x6) or carbon steel.

Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup potato starch
- 1 1/3 cups carrots (raw)
- 3/4 cup almonds (peeled)
- 2/3 cup sugar
- 1/3 cup sunflower oil
- 1/3 cup orange juice (and grated orange zest)
- 3 eggs
- 2 tsp baking powder
- 1 pinch fine salt
- 1 packet vanillin
Steps
Finely chop the carrots and almonds together using a blender.
Grate the zest of 1 medium-sized orange (preferably organic) and squeeze the juice.
Place the chopped carrots and almonds, flours, sugar, orange juice with grated zest, and all other ingredients of the recipe in a bowl. Mix well.
Butter and flour a 20 cm diameter bundt pan, or spray a release agent, pour the mixture inside, and gently tap the pan on the work surface to remove any air bubbles.
Meanwhile, preheat the air fryer to 320°F for 3 minutes. Place the cake in the basket and cook the cake at 320°F for 30 minutes. Perform the toothpick test at the end of cooking, and if necessary, depending on your air fryer’s power, increase the cooking time by another 5 minutes.
Once cooking is finished, remove the cake from the basket and let it cool slightly before flipping it onto a serving plate.
With my air fryer, 30 minutes of cooking is enough to achieve a fluffy and golden bundt cake, both top and bottom.
The texture is soft and slightly moist, with a subtle almond crunch for a delightful crunchiness.
