CARROT SAUCE

Carrot sauce is great for accompanying many cheerful and tasty dishes, such as fries and fried vegetables. It’s an original sauce that you can also spread on crostini and bruschette or serve with roasted meat or fish.

It is prepared quickly with boiled carrots and sautéed onions, then blended with fresh cheese, even vegan. Carrot sauce has a thick and compact consistency and can be stored in a glass jar in the refrigerator to have it on hand for any recipe.

Ingredients

  • 5.3 oz carrots
  • 1 onion (white, yellow, or red)
  • 4 tbsps olive oil
  • 3.5 oz fresh cheese (such as primo sale, replaceable with vegan cheese)
  • 1/2 clove fresh garlic
  • Half tsp fine salt
  • 1 tbsp mayonnaise (or fake mayonnaise or yogurt mayonnaise)
  • 1 pinch black pepper (ground)

Steps

  • Clean the carrots and cut them into pieces.

    Place them in a saucepan with water and a pinch of salt and boil until they are cooked.

  • Meanwhile, clean and chop the onion.

    Sauté it for a few minutes in a pan where you have added 4 tablespoons of olive oil.

  • Drain the carrots and place them in a blender, adding the fried onions and fresh cheese.

    Use cheese like primo sale which you can replace with plant-based cheese for the vegan version. Also add the other ingredients to the blender, the half clove of fresh garlic, from which you’ve removed the core, the half teaspoon of salt, the ground black pepper, and 1 tablespoon of mayonnaise. A great combination with yogurt mayonnaise or fake eggless mayonnaise.

  • Blend everything until you get a thick and creamy consistency.

    At the end, you can optionally add a handful of freshly chopped dill.

  • Carrot sauce is stored in a glass jar in the refrigerator.

    It’s a spreadable sauce different from the usual ones, that can accompany any dish, from fry-ups to crostini, to roasted meat or fish.
