CHEESE WITH RICE MILK, OLIVES AND PAPRIKA

The cheese made with rice milk, olives and paprika is a delicate vegan cheese and super creamy, entirely plant-based. It is eaten fresh, without aging, and is enriched with green olives and paprika that you’ll love from the first bite.

A “Fior di Riso”, as my son calls it, to slice and spread on wholegrain crostini, or use as a pasta sauce, or better yet to stuff small focaccias. And if you like to make plant-based cheeses at home, also try the cashew cheese or the creamy almond cheese or the pink pepper cheese. You just have to try them all.

Ingredients

  • 2 cups rice milk (plain, unsweetened (about 500 ml))
  • 5/8 cup potato starch (dissolved in a small portion of the milk (about 80 g))
  • 2/3 cup plant-based cream (rice-based cream is perfect (about 150 g))
  • 2 tsp agar agar (dissolved in a small portion of the milk (about 5 g))
  • 1 tbsp nutritional yeast (deactivated)
  • 1 tsp carob flour
  • 1 3/4 tsp fine salt
  • 1 pinch garlic powder
  • 1 1/2 tsp lemon juice ((about 8 g))
  • 1 tbsp olive oil
  • to taste green olives (pitted and sliced)
  • to taste paprika

Preparation

  • 1 – Weigh the rice milk and pour it into a nonstick saucepan. Separately dissolve the potato starch, agar agar and carob flour in a small portion of the milk. Then pour all the prepared ingredients into the milk, except for the lemon juice.
    2 – Place the saucepan over low heat and whisk the milk continuously until the mixture thickens and pulls away from the sides of the saucepan. At this point, turn off the heat and add the lemon juice, continuing to whisk.
    3 – Pour the cheese while still hot into a mold previously greased with olive oil, where you have arranged slices of green olives and paprika powder on the bottom. Leave the container open for 15 minutes before closing the lid.

    4 – Keep the rice milk cheese in the refrigerator for a few hours to allow it to firm up before consuming. After 24 hours the flavors of the ingredients meld together and the cheeses are even better.
