Chia seeds are true superfoods, rich in essential nutrients. They are an excellent source of omega3, fiber, and protein, which help maintain satiety and aid digestion. Additionally, they contain antioxidants and minerals such as calcium, magnesium, and iron, contributing to a balanced diet.

The preparation is very simple: Just mix the chia seeds with the plant-based milk and sweetener, let sit in the refrigerator for at least 2 hours (or overnight), and you’re done! The result is a creamy and refreshing pudding, perfect for a healthy breakfast, a snack, or a light dessert.

You can customize the pudding with any type of milk and add yogurt, fresh fruit, dried fruit, cocoa, coffee, matcha tea, or spices like cinnamon and vanilla, making it even more delicious and colorful. Whether you’re looking for a vegan, gluten-free option, or just a healthy treat, chia seed pudding is the ideal choice to satisfy your sweet tooth without sacrificing wellness!

  • Difficulty: Very Easy
  • Cost: Very Affordable
  • Rest time: 2 Hours
  • Preparation time: 5 Minutes
  • Portions: 1 serving
  • Cuisine: Italian

Ingredients

  • 0.85 cups plant-based milk (as desired)
  • 2 tablespoons chia seeds
  • 1 teaspoon maple syrup (as desired, or agave or honey)
  • 3 tablespoons yogurt (as desired)
  • to taste cranberries (fresh or dried)
  • to taste dark chocolate chips
  • to taste ground cinnamon

Steps

  • 1. Prepare all the necessary ingredients, including chia seeds, plant-based milk (such as almond, coconut, or soy milk), natural sweeteners (like honey, maple syrup, agave syrup, or coconut sugar).

    2. Mix the ingredients in a bowl or jar, the chia seeds, and the plant-based milk. Add the sweetener and, if desired, a pinch of vanilla or other spices for flavoring.

    3. Use a whisk or a spoon to mix the ingredients well, ensuring that the chia seeds are evenly distributed in the liquid. This will help prevent clumping.

    4. Cover the bowl or close the jar and place it in the refrigerator. Let it sit for at least 2 hours, but it’s advisable to leave it in the fridge overnight. During this time, the chia seeds will absorb the liquid and swell, creating a pudding-like consistency.

    5. After the resting period, check the pudding’s consistency. If it’s too thick, you can add a bit more milk and mix again.

    6. Once the desired consistency is reached, pour the pudding into the glass. Add 2-3 tablespoons of yogurt as desired, garnish with fresh or dried cranberries, dark chocolate chips, and a dusting of ground cinnamon.
