Ingredients
- 1 cup Greek yogurt (also low-fat, lactose-free, or plant-based)
- 2 tbsps chia seeds
- 2 tbsps coffee (strong espresso, or decaf)
- 1 tbsp maple syrup (or agave or rice syrup)
- to taste unsweetened cocoa powder
Steps
1 – In a bowl, put 3/4 cup of Greek yogurt of any kind, including low-fat, lactose-free, or plant-based (keep the remaining 1/4 cup aside) and mix it well with the chia seeds, maple syrup, and hot strong coffee.
Cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours. After 15 minutes, stir to loosen the chia seeds and continue to keep it in the fridge.
2 – After the resting time in the refrigerator, take the mixture. If you have a round pastry ring with a diameter of 4 inches and height of 1.5 inches, place it on a plate. Otherwise, make the tiramisu in a large bowl.
Pour the coffee and chia seed mixture into the mold and level it well. Take the 1/4 cup of yogurt set aside earlier, and if desired, sweeten it with 1 teaspoon of maple syrup. Pour it over the coffee yogurt and level it well. Sprinkle with unsweetened cocoa powder and place it back in the refrigerator for at least 1 hour.
3 – Serve it directly in the bowl or gently remove the pastry ring to leave the tiramisu’s shape intact.
