Ingredients
- 12 oz chicken breast (or boiled chicken or thighs and drumsticks)
- 10.5 oz potatoes (already boiled)
- 3 tablespoons breadcrumbs
- 1 tablespoon cheese (grated)
- 1 egg
- as needed chopped parsley + salt + ground pepper
- as needed sunflower seed oil (for frying)

Steps
To make the chicken nuggets, you can use whole chicken breast or boiled chicken, what’s left after making the broth, or thighs and drumsticks, cut into small pieces.
Boil the potatoes with the skin on, then peel and dice them.
Place the chicken, potatoes, and a drizzle of oil in a pan and sauté everything for just a few minutes.
Transfer the chicken and potatoes to a blender and add the breadcrumbs, the egg, the grated cheese, the garlic clove, the chopped parsley, salt, and ground black pepper.
Blend everything to obtain a thick and malleable mixture to form the nuggets.
Taste and add more salt if necessary.
With a teaspoon, take a small amount of dough and form the chicken balls.
Slightly moisten your hands to shape them; they should be small and all the same size.
Meanwhile, heat the seed oil in a small pot for frying.
Fry the chicken nuggets a few at a time, so the oil does not lower the temperature, five meatballs at a time are sufficient. Turn them while frying for a few minutes in the oil until they become a nice golden color.
Drain them with a spider skimmer and serve hot with tasty sauces or simply with a side of vegetables.
