CHOCOLATE COOKIES without eggs

Eggless chocolate cookies, large, crumbly, and with chocolate chips, nothing better and more comforting than a big cookie. Everyone loves chocolate cookies, adults and children, and these are made without eggs, also for vegans and vegetarians. Our American friends make cookies for every occasion, too bad they don’t use them for breakfast. Also try the coffee cookies with chocolate chips.
I love them in the morning with coffee, or as a snack, or as a sweet treat to finish a meal. Try them too, eggless chocolate cookies are great and if you want to impress your friends, give them as a gift.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2/3 cup potato starch
  • 3/4 cup sugar
  • 1/3 cup powdered sugar
  • 1 tbsp baking soda
  • 1 tbsp unsweetened cocoa powder
  • 2 pinches salt
  • 1 vanilla powder
  • 7 oz butter (or vegetable margarine)
  • 2 tbsp milk (or yogurt, soy yogurt)
  • 12 oz dark chocolate (chopped into small pieces or chocolate chips)

Preparation

  • Put the flour, starch, sugars, cocoa, baking soda, and salt in a bowl. Mix the dry ingredients. Add the softened butter or margarine and knead until well incorporated. Add the milk or yogurt and finish kneading the dough. Chill in the refrigerator for at least 20 minutes before forming the cookies.

  • Form balls of dough weighing 40 grams each to make large cookies, otherwise for smaller cookies, weigh out 25-30 grams of dough. Place them on a baking sheet and space them 2 1/2 inches apart.

  • Preheat the oven to 320°F (fan) or 340°F (static) and bake the cookies for 10-13 minutes. They should stay soft inside; if you bake them longer, they will become crunchier.

  • Take them out of the oven and let them cool before removing from the baking sheet, hold on, as they are fragile when warm. This recipe yields about 27 large cookies or about 35 smaller cookies.
