COFFEE COOKIES WITH CHOCOLATE CHIPS

The recipe for coffee cookies with chocolate chips is so easy and quick that every time I feel like creating a different version, like these with coffee.

They are crisp on the outside and soft on the inside, with a pleasant coffee aroma complemented by the energy of chocolate. They are perfect for any occasion, snack or breakfast, and if you like having more flavors, try also the lemon and pistachio cookies and the orange and coconut ones.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup coffee (sweetened espresso)
  • 1 egg
  • 1 packet vanillin (powder)
  • 1 tbsp baking powder
  • to taste chocolate chips
  • to taste powdered sugar

Steps

  • In a bowl, sift the flour and baking powder, add the sugar, beaten egg, vegetable oil, sweetened espresso coffee with 3 teaspoons of sugar, and vanillin.

    Knead the dough, compact it, and form a smooth and homogeneous ball. Place the dough back in the bowl, cover it with plastic wrap, and let it rest for 30 minutes or 1 hour at room temperature.

  • Put a handful of chocolate chips on one small plate and powdered sugar on another. Take a teaspoon of dough, about the size of a walnut, and form a ball. Roll one side of the ball over the chocolate chips, then roll both sides over the powdered sugar.

    Slightly flatten the cookies and place them on a baking tray lined with non-stick paper.

  • Preheat the oven to 350 degrees Fahrenheit and bake the coffee cookies with chocolate chips for 10 minutes.

    Once baked, lightly golden but not too much, take the tray out of the oven and let the cookies cool before removing them.
